Our Mexican Altura light roast is sourced from the highland mountain regions of Chiapas and Oaxaca in southern Mexico, where elevated altitudes and distinct micro-climates create ideal conditions for growing high-quality Arabica coffee. Cultivated on small farms averaging just a few acres, this coffee reflects truly careful, hands-on production. These coffees are known for their nutty notes mixed with mild chocolate flavor and fruity top notes, balanced with a mild acidity.
These coffees are custom roasted in small batches using renewable electric convection roasters. This roasting technology preserves the clean flavors and quality of these amazing coffees without the charred and burned flavor that is associated with gas-fired drum roasting.
